These Black Bean Brownies are perfect balance between rich, chocolatey and fudgy. You would never guess these are gluten free, dairy free, healthy and made of black beans!
Even better, these are super easy and quick dessert recipe to whip up and enjoy with some coconut ice cream or a cup of warm cacao.
Ingredients:
1 can organic black beans
¼ cup coconut oil, melted
2 eggs (or egg substitute)
¼ cup cacao powder
¼ cup honey
¼ tsp baking soda
Pinch of salt
Chocolate chips (I used carob chips)
Method:
Combine all together (except chocolate chips, leave them for last) in a food processor or mixer. Once combined into a thick, chocolatey sauce like texture, stir in most of the chocolate chips and then pour into a lined baking tray (I use a roughly 20x28cm). Top with more chocolate chips and cook for 20-25 minutes at 175 degrees.
